Bonjour !

Je viens de voir un commentaire sur une des recettes du site à propos de la levure chimique. J'avais déjà évoqué il y a quelques temps la différence entre levure de boulanger et levure chimique, et je crois qu'il est temps que je ressorte mes cours de chimie de la fac pour faire un calcul exact.

Avant tout, je ne suis pas chimiste, et je ne suis pas sûr à 100% de mes calculs, donc si jamais quelqu'un qui s'y connait pouvait confirmer ce que je vais écrire dans la suite, j'en serais ravi :-)

Bon, allons-y !

La levure chimique est composée de :

25% de bicarbonate de sodium
60% Hydrogénotartrate de potassium (ou de pyrophosphate de sodium, merci Véro)
15% d’amidon de maïs

Certaines levures contiennent donc plus de sodium que d'autres. Dans le cadre d'un régime sans sel, le premier reflexe est donc de bien faire attention à acheter de la levure utilisant de l'hydrogénotartrate de potassium, et pas du pyrophosphate de sodium.

Je prendrai donc pour mes calculs la levure la plus légère en sodium.

Pour 1 sachet de levure chimique pesant 11g, nous avons donc 11x24% = 2.75g de bicarbonate de sodium.

La formule chimique du bicarbonate de sodium est la suivante : 2NaHCO3
Cela signifie qu'une molécule de bicarbonate de sodium contient :

2 atomes de Sodium (Na)
2 atomes d'Hydrogène (H)
2 atomes de Carbone (C)
6 atomes d'Oxygène (O)

Les masses moléculaires de ces différents composants sont les suivantes :

Sodium (Na) : 22.989
Hydrogène (H) : 1.007
Carbone (C) : 12.011
Oxygène (O) : 15.999

On peut grace à ceci calculer le pourcentage du sodium dans la masse d'une molécule de bicarbonate de sodium (vous me suivez ?) :

masse totale de la molécule : 22.989x2 + 1.007x2 + 12.011x2 + 15.999x6 = 168.008
pourcentage de la masse totale correspondant au sodium : 22.989x2x100 / 168.008 = 27.35%

Pour 11g de levure chimique, on a donc 2.75x27.35% = 0.75 g de sodium.

Si mes calculs sont corrects, on a donc 0.75g de sodium dans un sachet de 11g de levure chimique, à condition d'avoir choisi de la levure à base d'hydrogénotartrate de potassium.

Si on considère qu'on utilise 1 sachet de levure pour réaliser un gâteau, et si on considère qu'un gateau se découpe en 12 belles parts, on peut dire qu'il y a environ 0.75/12 = 0.063g de sodium dans une part de gateau.

Voilà. Après à chacun de juger (ou de demander à son médecin), selon le régime qu'il suit, si 0.063g de sodium par tranche de gâteau est une dose acceptable ou non.

Ouaouh ! Merci pour tous ces calculs bien compliqués ! Perso, j'ai vainement cherché dans mon supermarché habituel les levures à base de potassium. Donc je vais devoir refaire ton calcul avec l'autre recette... Je suis pas sortie de l'auberge ! Je crois surtout que je vais redemander à la diététicienne à l'hôpital ! Adnem.

Bon, j'ai refait les calculs pour la levure à base de pyrophosphate de sodium (finalement, c'était pas si compliqué que ça ! Merci Guillaume !). Pour 11g de levure, on obtient environ 4g de sodium, soit (dans un gâteau de 12 parts) 0.335g de sodium dans une part. Et là, ça fait déjà beaucoup plus ! Et difficilement compatible avec un régime hyposodé, même large... Donc, je vais poursuivre ma quête de levure chimique à base de potassium. Adnem.
